Good Morning!! I hope you all had a wonderful weekend! It was lovely weather here in my part of the world. Low humidity + plenty of sunshine + mild temperatures equalled a wonderful, wonderful weekend! I worked around the yard and attempted to create some order among the chaos. It is amazing to me how fast weeds grow! UGH!
Anyway, I was sitting here thinking of what to make for supper. I'm trying really hard to come up with easy-to-please, tasty-but-frugal recipes that everyone in my household will like, and I stumbled upon this one over at Hillbilly Housewife. It is a perfect fit for my budget AND refrigerator supplies, as I have an abundance of eggs right now. This will make a tasty dinner for my hungry family! :)
•1/2 onion
•4 to 6 slices of breakfast ham
•1/2 green pepper (optional)
•4 small potatoes (cooked - see directions below)
•8 eggs
Start by dicing the onion, ham and green pepper. Get out your iron skillet and let it warm up over medium heat. Add a little oil to the pan. Add your diced ham, onion and pepper and allow it to cook until the veggies are tender.
If you have leftover baked potatoes, use those. If you don’t have any leftovers, get out 2 small potatoes, poke some holes in the skin with a fork and then microwave them until they are tender (about 7 minutes). Season with salt and pepper to taste.
