MONDAY!

Spring Break has finally arrived! I am glad for a break from the school routine and for the chance to just "relax and breathe" for a bit!

It is sunny out today, thankfully, and the weather forecast is predicting "sunny and warm" for the rest of the week. YAY! One year, the ENTIRE Spring Break was cold and rainy. Yep. That was a REALLY FUN break! NOT! :}

Anyway, I plan to hopefully get over to Walgreens today to pick up a few items and then, this afternoon, teen son starts PT for his knee. I hope that he can eventually regain full use of his knee and that it won't be stiff, sore, and bothersome. It is already the end of March and even though it seems far away right now, Marching Band Season will be coming up at the end of July. And, my boy wants to be in tip-top shape!

With Easter right around the corner from us, I thought I'd share a recipe that my Grandma used to make. I never really appreciated all of her cakes, candies and cookies, but now that she is gone, I find myself seeking out her recipes and trying to make them like she did. For some reason though, they tasted better when she made them!

Chocolate Roll Recipe

2 egg whites
22 marshmallows, cut fine (or 2 c. mini marshmallows...my Grandma always loved using the colored ones!)
2 oz unsweetened chocolate, melted
1/3 tsp. cream of tartar
1 c. sifted powdered sugar
1 c. shredded coconut

Beat egg whites until they are stiff and stand up in peaks.
Add marshmallows, melted chocolate, cream of tartar and sugar, and mix together well.
Shape chocolate mixture into 2 ten-inch rolls.
Roll in shredded coconut.
Chill in refrigerator until firm.
To serve, cut in 1/4-inch slices. Makes about 2 dozen slices.

  1. It's spring break here, too! And I can hardly wait for the warm days...60s here today, but mid-to-upper 70s the rest of the week! I'm so ready for it.

  2. It's spring break here too! I hope that it gets warm here for the week. I would love to plant and clean up the yard a bit!
