MOM MINUTES BREAKFAST ON THE RUN

This week's Mom Minutes is going to focus on quick-and-easy Breakfasts on the Run. These are quick and easy to make, and will save you time and money in the morning. You can prepare these right in your own kitchen and enjoy a hot breakfast for a lot less money. Plus, a certain someone (HI HELENE!!) won't trip over a certain 47 lbs of gray stripey goodness at 5:00 in the morning coming back with her breakfast sandwich!! :)

Have you ever tried homemade biscuit sandwiches?
  • Make biscuits (I try to make a big batch of homemade but you can substitute canned biscuits).

  • Cook bacon until crisp enough for 1 slice per biscuit.*

  • Cook fried eggs until the yolks are hard.

  • Split each biscuit, put one slice bacon, one egg, and one slice of your favorite cheese. Wrap up in plastic wrap and freeze.
To serve, unwrap a sandwich and place on a plate, cover with a paper towel and heat in the microwave until hot.

*You can improvise and use sausage patties or ham instead of bacon.

These sort of resemble fast food breakfast biscuit sandwiches but they're much better!

Microwaved eggs, cheese and ham:
  • Put two or three eggs in a microwave safe bowl

  • Add chopped up canned ham (about 1-2T)

  • Break up a slice of cheese in it,

  • Add about 1-2 tsp of milk

  • Scramble all the ingredients together and put in Microwave

  • Re-scramble every minute or so during cooking. Should take about 2-3 minutes.

I used to make these for customers when I worked at the hospital Snack Bar, and it was a very popular breakfast item! Some of the customers would also order a side of toast, put the mixture between the slices, wrap it in a napkin, and off they'd go!

For those of you who would rather have something lighter, yogurt with sliced up fruit and sprinkled with granola is healthy and delicious!

If you have younger ones in the house and they won't eat anything, try cutting a banana in circles and sprinkling with a little colored sugar. Serve with toast cutouts (simple shapes made with a cookie cutter) and this becomes a breakfast that most toddlers can't resist!

    But, but, but,mom!!!!!!!!!!!!!!!! That involves errrrrrrrrrrrrr cooking!!!!!!!!!!!!!!! I was thinking more like not driving to McD's at 5am on these cold mornings, not having to go to the store ever at all and just having something appear on a plate??
    Uh Oh. I felt that look mom gave me. Ok ok I will try (head down, sheepish look)

  3. Helene...My Mom is going to die laughing when I read her the comments! So Funny!! For not knowing my Mom personally, you sure know "that look!" HA HA! And, it would be THAT LOOK!! :)

    I was going to add, but I didn't, that I (being Not Exactly Like My Mom) use frozen biscuits (gasp!...don't tell her!) that I sometimes buy at Market Day (from the school) or even Schwans. Those are soooooo handy! I've also gone the really easy route and ordered pre-made breakfast sandwiches from the same companies. Oooohhh..Yummy! (but kinda pricey and not as thrifty as making it myself)

    For quick and easy food that just "appears" on your plate, cut out some magazine breakfast pics, paste it on, and voila! Instant Breakfast! LOL
